1Cut unpeeled potatoes in half. Place in large pot and cover with water. Bring to Boil and cook for 40 minutes or until soft. Rinse potatoe in cold water and let cool. When cold enough to handle, peel and cut potatoes in chunks.
2Place eggs in pot and cover with water. Bring to boil, then cover pot and turn off heat. Let sit for 15 minutes (do not remove lid). Rinse in cold water and peel. Chop or slice with egg slicer.
3Chop celery and onion. Slice olives.
4Place potatoes, celery, onion, olives, mayo, sugar, salt and eggs in large bowl. Fold/stir all ingredients together. Add more mayo if too dry. The potatoes and egg yokes will break down into smaller pieces.
