This is how I learned, & have always made potato salad.

Ingredients

6-8 medium
russet potatoes, skinned, cubed & boiled
1/4 c
diced onion
4
eggs, boiled, peeled, & chopped
2 Tbsp
sweet pickle relish
1 c
miracle whip, light
1 c
mayo, low fat
1 1/2 Tbsp
bold & spicy mustard
1
roasted red bell, chopped (or pimento)
1 tsp
black pepper

Directions Step-By-Step

Boil the potatoes till tender, & drain. Boil the eggs, cool & peel. Mash the potatoes adding a very small amount of milk. Chop the eggs and red bell.

In a large bowl mix together all ingredients together. Refrigerate. (Add more miracle whip or mayo if desired).
