I love loaded baked potatoes and potato salad so this was my way of combining them. I haven't had anyone try it so far who didn't love it. The measurements here are my best guess. I normally just throw it together. Enjoy!

Ingredients For loaded baked potato salad

  • 4-5 c
    diced potatoes
  • 1 c
    freshly grated cheddar cheese
  • 6-8 slice
    bacon
  • 4
    scallions diced
  • 1 -1 1/2 c
    mayonnaise
  • 1 Tbsp
    onion powder
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    coarse sea salt
  • 1 stick
    butter

How To Make loaded baked potato salad

    Peel and dice potatoes/ boil 10-15 minutes until fork tender.Turn off the heat and drain the potatoes. Return the pan back to the burner to help dry out the rest of the water. This is when I add the stick of butter in slices and mix well.

    Add chopped scallions, bacon that has been fried crisp and crumbled, mayo, salt, onion powder and pepper. Mix well and chill 15-20 minutes.

    The last thing I do is add the cheese after it has chilled somewhat so that the cheese doesn't melt. Return to the refrigerator and chill for at least another hour before serving. Enjoy!

    * Optional/ I add a little sugar to mine because that is how my mother cooked. We add a little sugar to everything!
