I love this mock potato salad!! I've eaten this as a complete meal. You can double this to keep in the fridge for meals during the week. 1 serving = 1 meal.

raw cauliflower
1 c
celery, diced

green onions

eggs, hard boiled
3 Tbsp
safflower mayo
8 oz
tofu
1/2 c
egg salad dressing
2 tsp
chopped pimentoes

Mix all the ingredients together.

EGG SALAD DRESSING:
3 HARD BOILED EGGS
2 TSPS. WATER
3 TSPS. APPLE CIDER VINEGAR
2 TSPS. LEMON JUICE
DASH SALT
DASH PEPPER
DASH ONION AND GARLIC POWDER

Blend all in blender until creamy.
1/3= 1 oz. protein
