Ingredients

2 lb
potatoes, cubed and cooked and drained
5
hard boiled eggs
1/2 c
finely chopped celery
1/2 c
finely chopped onion
1/3 c
chopped sweet pickle or relish
1 1/4 c
mayonnaise
1 Tbsp
prepared mustard
salt and pepper to taste
paprika for garnish, optional

Directions Step-By-Step

Boil potatoes, drain, let cool, cut into cubes.

Dice eggs, add to potatoes along with celery, onion and sweet pickle.

Combine mayonnaise, mustard, salt and pepper.

Fold gently but thoroughly into potatoes.

Sprinkle with paprika.

Cover and chill several hours.
