Ingredients

1 lb elbow macaroni, cooked
1/3 c red wine vinegar
1 1/2 pt crawfish tails, cooked and shelled
DRESSING INGREDIENTS
1 c half & half
2 1/2 c olive oil mayonnaise
1 Tbsp brown sugar-more if you wish
1 Tbsp mr. pete’s cajun spice
1 sm sweet onion, chopped
1 1/2 Tbsp chives, chopped
2 carrots, chopped
2 celery ribs, chopped
zest of 1 lemon
salt & pepper to taste

Just imagine an easy & tasty macaroni salad with the flavors of the Big Easy...well no need to make a trip to New Orleans, this macaroni salad will have you saying, Whodat in no time at all. Cooking with Passion, sw :)

 

Directions

Combine cooked macaroni and vinegar in a large mixing bowl. Mix well.

Combine dressing ingredients in a medium size mixing bowl. Whisk thoroughly.

Add dressing to macaroni a mix well. Fold in ¾ crawfish tails “reserve ¼ for topping right before serving”. Chill in fridge until ready to serve.

thanks wendy. you could always substitute your favorite protein such as shrimp or chicken. this was so good. heck you don't even have to have any seafood or met in it at all. it's great just by itself.

Thanks, Yes I will have to settle for frozen shrimp...drats anyway! lol
I so want the crawfish, I had a friend order some from the south once for a party...OMG YUM!!!

Wow this is over the top amazing!
I am making macaroni salad today and was asked to put tuna in it, and have made it that way for years as well as sometimes adding shrimp, but would have never thought of adding crab.
Spices look like they work really well together...pinching another one of yours Sherri :)

Sherry your Recipe looks awesome. I am glad you suggested some other type of protein, because that is what I would use because of my allergies to seafood. But as always it really makes you want to jump into the computer screen and grab all of that seafood on top. I know if you made it, it has to be good.
