Ingredients

1 lb
short pasta bowties
2-3 Tbsp
extra-virgin olive oil
1 pt
cherry or grape tomatoes, halved
1 small
red onion, diced
1/2
each yellow and green bell pepper, diced
1/2 c
black olives, sliced
1 lb
cooked sala shrimp, thawed
1/4 c
fresh basil leaves, torn into small pieces
1 c
prepared refrigerated pesto sauce
1/2 c
mayonnaise
2 tsp
fresh lemon juice
1/2 c
cup grated parmesan cheese

Directions Step-By-Step

Cook pasta until al dente. Drain and toss in a large bowl with olive oil. Add tomatoes, onion, peppers, olives, shrimp and basil. Set aside while you make the dressing.
Whisk pesto sauce, mayonnaise, lemon juice and Parmesan together in a bowl. Add to the pasta salad mixture and mix until thoroughly combined. Serve at room temperature or chilled.
