Mint and White Bean Salad

My mother and stepdad came into town to visit my husband and I. We ventured to a new restaurant that supported local farmers, Elk Creek Cafe, which was amazing.

The dish I selected came with a salad very similar to this. I love onion and mint and it is not very often that you can have both at the same time!

red onion
1 box
orzo pasta
4 sprig(s)
chopped mint (fresh)
1 Tbsp
olive oil
3 Tbsp
2 can(s)
white beans
2 Tbsp
lemon juice

Directions Step-By-Step

Chop the onion into chunky slivers. squeeze a little lemon juice over it and add the olive oil. Set aside while preparing the other ingredients.
Cook the orzo pasta according to the directions. Drain and rinse with cold water.
Drain the white beans and combine with the other ingredients (including the onion and orzo) into a bowl and chill for an hour. This can be kept in the fridge for a few days.
