I got this recipe from a good friend of mine that she brought to potluck dinners at church. It was always a big hit. I still make it for church and at home.

Ingredients For joyce's pasta salad

  • 16 oz
    rotini pasta or fusillli
  • 12 oz
    feta cheese, crumbled
  • 1/2 c
    kalmata olives-sliced
  • 1/2 c
    sundried tomatoes-diced (i sqeeze out the oil)
  • 3 c
    fresh spinach-finely sliced
  • 1/4 to 1/2 c
    red onion, chopped
  • SAUCE
  • 1/2 c
    olive oil
  • 3 Tbsp
    red wine vinegar
  • 2 to 3 clove
    garlic, minced
  • 1/2 tsp
    salt, i add it to taste
  • pepper to taste

How To Make joyce's pasta salad

  • 1
    Mix ingredients together and then add your sauce. Mix all together well. The extra garlic and salt just give it more flavor for my taste.
