My oldest granddaughter Isis has been begging me to make her a tortellini salad. She loves Italian-style salads so I made this. Now, she's always saying, " Grandma, when are you going to make that tortellini stuff again?'" I created a monster, hahaha.

Ingredients For happy kids italian tortellini salad

    16 oz pkg-cheese filled tortellini, frozen
  • 4 oz
    sliced pepperoni
  • 2
    green onions, sliced
  • 1 sm
    can, sliced black olives, drained
  • 1
    6.5 oz jar marinated artichoke hearts, drained, chopped
  • 6 oz
    mozzarella cheese, diced
  • 1/3 c
    olive oil
  • 1-1/2 Tbsp
    red wine vinegar
  • 1-1/2 Tbsp
    white wine vinegar
  • 1-1/2 tsp
    dried italian herbs
  • salt and pepper to taste

How To Make happy kids italian tortellini salad

    Cook tortellini as directed, drain. Place cooled tortellini in a lg bowl.

    Add pepperoni, green onion, olives, artichokes and cheese to the bowl. In medium bowl, whisk together oil, both vinegars and italian herbs.

    Season oil mix w/ salt and pepper to your taste. Drizzle over tortellini mix. Gently toss. Chill at least 2 hrs to meld flavors.
