Ingredients For greek spinach and orzo salad

  • 8 c
    baby spinach leaves ( stems removed)
  • 1/2 c
    red onion- diced or sliced thin
  • 1/3 box
    orzo pasta (cooked)
  • 1/2 c
    pine nuts - toasted in oven
  • 4 oz
    feta cheese - crumbled
  • 1/2 bottle
    greek vinaigrette ( prefer marie's)
  • 1/4 bottle
    lemon vinaigrette ( marzetti')
  • 4 oz
    grape tomatoes (optional)

How To Make greek spinach and orzo salad

    Wash and drain baby spinach leaves, remove stems.
  • 2
    Cook orzo pasta according to directions on box.
  • 3
    Slice or chop red onion: Toast pine nuts in 350 oven for 5-10 minutes ( foil or cookie sheet). If desired slice grape tomatoes in half.

    Combine both types of prepared salad dressing mentioned in recipe. Add all ingredients in salad bowl and toss with the combined dressing to taste.
