Ingredients

1 c white sugar
2 Tbsp all purpose flour
2 1/2 tsp salt
1 3/4 c unsweetened pineapple juice
2 eggs,beaten
1 Tbsp lemon juice
3 qt water
1 Tbsp vegetable oil
1 pkg 16 ounce acini di pepe pasta
3 can(s) (11 oz )mandarin oranges, drained
2 can(s) 20 oz pineappple tidbits,drain
1 can(s) 20 oz crushed pinapple,drain
1 pkg 8 oz frozen whipped top, thaw
1 c miniature marshmallows
1 c shredded coconut

Diana's Notes:

I had this salad while visiting family in North Dakota. My Florida friends had never had it nor had I! Great take on a pasta salad!

 

Directions

In a saucepan, combine sugar, flour, 1/2 tsp salt ,pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat, add lemon juice and cool to room temperature.

Bring water to boil, add oil, remaining salt and cook pasta al dente. Rinse under cold water and drain.

In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.

I love pasta!! Probably my biggest weakness...so when I saw this recipe I thought, WOW what a different way to use pasta, so I gathered the ingredients and made it...first of all, it makes a TON!! There are only 2 of us and my first thought was OMG we will never eat all of this....the flavor combination is amazing....very light fresh and tropical...great for summer...I personally loved it...just need to cut the recipe at least in half....my husband didn't care for it, he didn't like the texture...said it felt like pea gravel in his mouth (MEN...lol)maybe next time I will make it with orzo for a different texture...will try it again...thanks for sharing!

If the texture was like pea gravel, I don't think you cooked the pasta long enough...I cooked it 5-6 minutes for this salad. Thanks for trying!

OMG; I love this salad and it does sound like Mary Kay didn't cook the pasta long enough because it should be very soft. It does make a lot and is excellent for potlucks or big events. A great salad for summer. Thanks, Diana, for posting!!!

Thanks for your comments again! I agree it is a great dish for potlucks..it makes a lot! There are only two of us and I would only make it to share with a lot of friends!

Thanks you guys for the suggestion of cooking the pasta longer...I didn't agree with my husband's assessment that the texture was like pea gravel...that was just his opinion, but nonetheless I loved the salad and will make again for a pot luck sometime...I was sure I cooked the pasta according to pkg. directions (first time I had used this type of pasta) but will double check next time....thanks again ladies and happy cooking!!
