This makes a great summertime lunch, or anytime lunch. Meat, pasta, veggies--what more could you ask for? Found this in my old, old recipe file. I don't think I made it more than once or twice because my son wouldn't eat anything with tomatoes in those days.

Ingredients

1 box
(7-1/4 oz.) kraft mac & cheese dinner
1 can(s)
(5 oz.) chunk chicken
1/2 c
mayonnaise
1/2 c
celery, sliced
1/4 c
green onions, sliced
4 large
tomatoes
4 large
lettuce leaves
fritos or doritos

Step-By-Step

1Prepare the mac & cheese dinner as directed on package; drain.
2Add chicken, mayo, celery and onion. Mix lightly and chill for about 2 hours.
3Add more mayo before serving, if needed.
4Cut each tomato in six sections, almost to the stem end. Fill with mixture. Serve on lettuce leaves, surrounded by chips.
