This is dish I made after getting my husband packed and ready to go over the road again. He was only home for a few days “ glad he is not doing that anymore” OTR driving that we have to cram all our running, plus doing his tons of laundry, grocery shopping for him and me, etc etc etc.
This is what I had in the refrigerator as left overs
And yes that is a paper plate…ha ha ha….

pinch tips: How to Cut Cherry Tomatoes




1 good size chicken breast cooked
1/2 of 1 & ¾ can cream of celery soup
½ can of 1 & ¾ can of chicken broth
1 teaspoon tomato paste
¾ cup sour cream
1 teaspoon sea salt
2 teaspoons fresh ground pepper
4 ounces cooked pasta any kind will do
romaine lettuce sliced like for salad
doritos fiery habanero chips

Directions Step-By-Step

Cut the chicken off the bones and remove skin
In a sauce pot add the soup, broth, tomato paste, , salt and pepper. Cook till it is reduced by at least ½ .
Add the sour cream and cook for about 5 minutes longer on a really low heat. Once the sauce is all hot and bubbly add the chicken and noodles cook for an additional minute or two.
I put this over romaine lettuce, and served it with tons of fresh ground pepper and Doritos… was really quite delicious if I say so my self.
