Artichoke Pasta Salad

This recipe was given to me by a friend who knew how much I loved artichokes. Its easy and delicious.

1 lb
uncooked pasta, your favorite shape (spirals, shells, etc)
1 medium
head of broccoli, cut into bite sized pieces
1 small
red bell pepper, sliced into thin strips
1 small
yellow bell pepper, sliced into thin strips
1 small
sweet red onion, sliced thin
2 jar(s)
(6 1/2 ounces) marinated artichokes, drain and reserve liquid
1/2 c
shredded romano cheese (or parmesan)
sea salt and freshly ground black pepper to taste
1 pinch
red pepper flakes, optional

Directions Step-By-Step

Cook pasta according to package directions. Add cut broccoli during the last 3 minutes of cooking time. Drain and rinse with cold water.

In a large bowlmix all ingredients, adding as much of the artichoke marinade as you like. Season to taste. Chill for 3-4 hours to blend flavors before serving. Best served cold.
