Yummy carrot salad

Another great and tasty carrot salad that I have been making.

Do not make the day before or overnight. The salad will get soggy.
Hint: If you have any leftovers and want to save for the next day...add another small grated carrot.

I originally found the recipe on the Safeway.com web page that was submitted by Karena.

Food Processor

Ingredients

3 large
carrots, grated
1 c
raisins (option)
1 c
walnuts, chopped
1/4 c
finely chopped celery
2 Tbsp
shredded coconut

DRESSING

1/2 c
mayonnaise
2 Tbsp
sour cream
1 Tbsp
apple cider vinegar
1/2 tsp
white sugar
1/4 tsp
salt

Directions Step-By-Step

Add raisins, walnuts, celery, carrots and coconut to a medium size bowl.

Dressing: Mix together the mayonnaise, sour cream, vinegar, sugar and salt in a separate bowl

Add dressing to carrot mixture and stir until well coated.
Cover and chill for a couple of hours before serving.
