The original recipe has soba noodles in it,you can add them if you like.
You can also use green cabbage if Napa is not available.

- 1/3 c rice vinegar
- 1/4 c sugar
- 1 t. sambal
- 4 t. lime juice
- 2 t. canola oil
- 1/2 t. salt
- 10 c napa cabbage,about 1 head
- 1c carrot,shredded (1 whole)
- 1/2 c zucchini,shredded (1/2 medium)
- 1 c dry roasted unsalted peanuts
1Mix vinegar,sugar,sambal,lime juice,oil and salt together. Microwave 3-60 seconds to dissolve sugar and salt. Set aside.
Combine remaining ingredients well,pour enough dressing to coat salad,toss. Chill at least 4 hours or overnight.
