Super Easy Cornbread Salad

Ingredients

1 box
jiffy cornbread mix
2 c
kraft ranch dressing
1
green pepper, chopped (or 1/2 red and 1/2 green is also good)
1 medium
red onion, chopped (must be red)
1 can(s)
whole kernel corn
1 can(s)
red kidney or pinto beans
2 medium
tomatoes, chopped
2 c
cheddar cheese, shredded
1 lb
bacon, fried crisp

Step-By-Step

1Prepare cornbread, bake and set aside to cool. Once cool, crumble into dish.
2Drain and mix together corn and beans. Put this over cornbread.
3Chop and mix together onion, tomato and pepper. Put this over beans/corn.
4Cover with the cheese.
5Pour Ranch dressing over this. Crumble crisp bacon over this. Cover and refrigerate overnight. It won't taste right until it sits overnight!
6You can also use Mexican cornbread and chili style beans for this recipe, if you want a spicier version. You can even throw in a bit of chopped Jalapeno!
