Summer Sausage, Grape Tomato and Mozzarella Salad
Use red or yellow, or a combination, of grape tomatoes.

- summer sausage, paper removed and cut into 1/2-inch cubes
- 1 pt
- grape tomatoes, halved
- 8 oz
- small fresh mozzarella balls (usually in a tub-type container in the deli-cheese section)
- 1/3 c
- chopped italian (flat-leaf) parsley
- 1/2 c
- italian salad dressing (your favorite-we like newman's own)
1In a bowl, combine the summer sausage, tomatoes, mozzarella cheese and parsley.
2Add Italian dressing; toss to coat. Refrigerate until serving.
