Summer Salad (All Summer Long)

We try to eat healthy and it seems easier in the Summer with all the wonderful things available to us. This is one my easy, delicious and healthy 'Go-To's'.Adding Black Beans for protein.

1 lime, zested and juiced
1 small orange, zested and juiced
1 bellpepper, diced
1 jalapeno, seeded, diced
1 ear fresh corn, cernels cut off cob
2-3 radishes, sliced
2 cloves garlic, minced
1 baby cucumber, cut lenghtwise, sliced
1/2 red onion, diced
1 can black beans, drain and rinse
1-2 tbsp. white wine vinegar
salt to taste.
italian parsley or cilantro and or mint leaves, about a handful, light chop


1Combine all ingredients in a bowl and toss well.
Season with salt to taste. I use about 1-1/2 tsp. Kosher salt. Let it sit on the counter for about an hour if you can.
Depending on how juicy your lime is will depend on 1 or 2 TBS> of the vinegar.
This keeps well in the refrigerator and I have used it as a side dish or salad.
