I came up with this to utilize tomatoes from a bumper crop. We now look forward to it every summer.
- large tomatoes, like beefsteak
- med. to large cucumbers
- large vidalia onion
- bottle italian salad dressing
1peel cucumbers, slice into quarters lengthwise, remove seeds. Cut into small chunks, put into a plastic type container with a cover.
2peel tomatoes. cut into sections - add to cucumbers.
3peel onion. slice into thin rings - add to bowl
4add just enough italian dressing to cover veggies. Marinate in frig. at least 1 hour before serving.
