this salad my mom used to have a lot with our meals
tomatoes, cut into 1/2 inch chunks
red onion, cut into 1/2 inch chunks
cucumber , sliced and quartered
green bell pepper, cut into chunks
olive oil, extra virgin
red wine vinegar
fresh squeezed lemon juice
chopped fresh cilantro
1In a large bowl, combine tomato, red onion, cucumber, and green bell pepper chunks, toss gently.
2In a small bowl, combine oil, vinegar, lemon juice, cilantro, salt, and black pepper, whisk until well blended.
3Pour dressing into large bowl with mixed vegetables and toss gently until well combined. Serve, or cover and chill until ready to serve.
