Summer Cucumber Salad

If you are a localvore, this is a salad for you to show off the local produce in your area. Especially in the summer when your garden might be producing an over-abundance of tomatoes and cucumbers!

2 c
cherry tomatoes, halved
4 medium
cucmbers, peeled and sliced
1 large
clove garlic, minced
1/2 tsp
sea salt
2 Tbsp
balsamic vinegar
1 tsp
fresh lemon juice
3 Tbsp
fresh basil, chopped
1/2 c
extra virgin olive oil
1 tsp
fresh ground pepper, to taste

Directions Step-By-Step

Place tomatoes and cucumbers in a large serving bowl. In a blender, combine clove, salt, vinegar, lemon juice, basil, oil and honey. Blend to incorporate. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with more chopped basil if desired. Refrigerate or serve at room temperature.
Serves 6.
