Summer Corn Salad
my dear friend, Jane, shared this yummy recipe with me and I just had to pass it on.
- ears fresh corn
- grape tomatoes---2/1 corn to tomato ratio
- 1/2 c
- finely chopped red onion
- 3/4 c
- chopped parsley or cilantro
- juice of 1/2 to 1 lime..to taste
- salt & pepper to taste
1peel corn & place in boiling water. boil 5 minutes
2Drain and cool in refrigerator.
3Cut corn off cob with sharp knife.
4Cut up grape tomatoes into about 4 slices each
5Combine all ingredients and chill. Taste and adjust seasonings to taste.
