Ingredients For spring turnip slaw

  • 3 c
    spring turnips, tops removed and shredded
  • 1/2 sm
    carrot, peeled and shredded
  • 1/4 c
    red bell pepper, seeded and cut into small pieces
  • 1/4 c
    red onion, peeled and diced small
  • 2 Tbsp
    fresh chives, minced
  • 1/4 c
    mayonnaise, or a little more
  • 1 Tbsp
    apple cider vinegar
  • 2 Tbsp
    sugar
  • salt, to taste
  • black pepper or white pepper, to taste
  • 1/4-1/2 tsp
    cumin seeds, lightly crushed (start with the smaller amount)
  • fresh cilantro, for garnish
  • spring turnip greens

How To Make spring turnip slaw

    In a bowl, combine turnips, carrots, bell pepper, red onion and chives.

    In a separate glass prep bowl or measuring bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt and pepper. I thinned the dressing with a small amount (about 1 T. of milk). Pour over the turnip mixture. Stir well.

    Now stir in the cumin seeds. *Transfer the mixture to a serving platter or bowl. Garnish with fresh cilantro. Cover and chill at several hours for best flavor.

    *If desired, line a serving bowl with spring turnip greens then spoon the slaw over the greens.
