spicy peanut quinoa salad

I like to cook the quinoa ahead. I cook a whole box with either chicken broth or with vegetable broth. Then I keep it in the fridge so it's ready whenever I want to throw together a health dish. Always use broth to make your quinoa because it makes it taste so much better. I was watching a talk show on TV and they had a chef on. He made a dish similar to this and it sounded so good, I threw together the ingredient's I thought would make a nice peanut sauce and added the quinoa and veggies. Now I make this when my kids come to town because they don't eat meat. Enjoy the taste!

Ingredients For spicy peanut quinoa salad

  • 3 c
    cooked quinoa
  • 1 bag
    cole slaw cabbage or broccoli slaw
  • 1 bag
    bean sprouts
  • 2 c
    snow peas (blanched), trimmed and sliced
  • 1 tsp
    crushed red pepper flakes
  • 1/2 c
    creamy peanut butter
  • 1/2 c
    soy sauce
  • 1 bunch
    scallions sliced
  • 2 Tbsp
    rice wine vinegar
  • 2 Tbsp
    sesame oil
  • 2 Tbsp
    canola oil
  • 1/2 c
    chopped water chesnuts

How To Make spicy peanut quinoa salad

    Mix the peanut butter, soy sauce, sesame oil, canola oil, rice wine vinegar and crushed red pepper flakes with a whisk

    In a separate bowl mix all the vegetables and quinoa.

    Combine the sauce with the quinoa and vegetables.
