Simple Greek Salad
This recipe is really versatile, ingredients can easily be added or substituted based on personal taste. The olive oil and lemon juice can also be adjusted based on personal taste.
1Peel, slice and quarter the cucumber and cut tomatoes in half.
2Squeeze the juice from half a lemon.
3Combine all ingredients and gently toss to coat. (Left overs can be refrigerated for 2-3 days, simply stir to redistribute olive oil before serving again).
4*Optional Ingredients -
Salt to taste (I never add salt as the feta is "salty" enough for me)
1/4 cup black olives, slices or halved
1-2 pieces worth of bacon (crumbled or chopped)
1/2 tsp fresh lemon zest
3-4 anchovies (minced or chopped)
*note that if you add instead if substitute any ingredients you may want to increase the olive oil by half a tablespoon.
