Russian Winter Salad

Ingredients

1 pkg
frozen lima beans (10oz)
1 pkg
frozen peas and carrots
2 can(s)
sliced beets, drained, diced into cubes
8 oz
sour cream
1 large
sweet onion, diced
1
cucumber, seeded, diced
minced parsley
sliced green onion
garlic powder, salt, pepper to taste

Step-By-Step

1Saute onion in butter until transparent; remove from pan.
Add peas, carrots, limas to remaining butter and cook until thawed and just softened.

2Return onion to pan to mix, then place in bowl.
Add beets and sour cream.
Toss with parsley, green onion, cukes, and seasonings to taste.

3Serve at room temperature.
