Pam's Easy Cuke and Mater Salad

1 medium cucumber, peeled and deseeded and chopped
1 medium tomato, chopped
1 or 2 small spring onions chopped (optional)
2 Tbsp sour cream
2 Tbsp mayonnaise
1 squeeze of lemon (2 tsp)
seasoned salt and pepper to taste
2 oz wensleydale cheese ( mild feta is a good substitute, but more tangy)

Being lazy tonight so I just cut up some veggies and slapped them together with a bit of crumbly cheese. Voila, Salad

Easy Peasy..... Dump all chopped veggies in bowl, squeeze lemon over. Add mayo and sour cream. Mix well and season to taste with seasoned salt and pepper. Crumble Wensleydale cheese over all and serve.
