Nutty Pina Colada Slaw

This recipe just evolved from an exciting weekend at the finals of the WFC in Vegas ! Created to top my Troical Sun ( fish) sandwich, I decided this was the best part :) I thnk it will go well with just about anything !

Ingredients

1/2 c
mayonaise
2 Tbsp
fresh pineapple juice
1 pinch
kosher salt
2/3 c
finely chopped fresh pineapple
5 c
cabbage mix, shredded finely or angel hair style
2/3 c
shredded unsweetened coconut ( but sweetened is fine also)
3 oz
chopped pecans

Step-By-Step

1Combine the mayo, juice and salt in a large bowl. Add pineapple, cabbage and coconut.
2Stir until all the ingredients are coated in dressing.
3Chill for at least 15-20 minutes , then add nuts right before serving.
