Lite as Springtime Balsamic Avocado Vinaigrette

This is an excellent Springtime dressing for your favorite salads.

Using avocado; as opposed to standard mayonnaise just takes it over the top, and the addition of honey gives it a fresh Spring taste. So yummy.

So, you ready… Let’s get into the kitchen.

1/4 c
balsamic vinegar
2 clove
baked garlic
1/2 medium
ripe avocado
1/4 c
extra virgin olive oil
1 Tbsp
honey, or to taste
salt, kosher variety, to taste
black pepper, freshly ground, to taste

2Gather your ingredients.

3Place the garlic on piece of parchment paper, and drizzle with a bit of olive oil.

4Twist the parchment paper up, and place in a preheated 350f (175c) oven for fifteen minutes.

5Add all the ingredients (including the baked garlic) into a prep bowl, fitted with an S-blade.

6Blend until smooth.

7Chef’s Note: Stop and check the seasoning: Adding more salt, pepper, or honey according to taste.

8Cover and allow to rest in the refrigerator for 1 hour before using.

9Chef’s Note: This dressing will last for 3 to 4 days in the fridge, if tightly covered.
