Ingredients
| 6 oz | pkg. lemon jello |
| 2 c | boiling water |
| 1 c | cold water |
| 2 c | cold milk |
| 3 oz | pkg. lemon instant pudding |
| 8 oz | pkg. cream cheese, softened |
| 1/4 c | chopped pimentos, optional |
| 1 c | diced celery |
| 2 c | diced apple, unpeeled or peeled your choice |

Directions
Dissolve jello in boiling water; stir in the cold water. Chill for about 1 to 1 1/2 hour; just until it jells a little.Prepare the pudding with the milk; chill 5 minutes. Beat the cream cheese until creamy and add the pudding mixture to the cream cheese along with the partially set jello. Beat for 2 minutes.
Fold in remaining ingredients and pour into mold or bowl and chill until set. Unmold onto serving plate or serve from bowl.
