Garbonzo Bean Salad

This is a healthy side or a light lunch.

garbonzo beans, drained and rinced
carrots, diced
1 large
tomato, chopped
1 small
purple onion, finely chopped
1/4 c
extra virgin olive oil
1/4 c
cider vinegar
2 Tbsp
dried dill
salt and pepper to taste

Directions Step-By-Step

For the dressing, mix the oil, vinegar, dill, salt and pepper. Mix well.
Place the garbonzo beans, tomato, carrots, and onions in a salad bowl. Toss with dressing.
Refrigerate and let the vegetables marinate for several hours or overnight.
