Ingredients

2 c
baby spinach
1/2 c
black or pinto beans, canned, drained
1/2 c
corn kernels, frozen, thawed or canned
3/4 oz
low-fat cheese
1 medium
avocado
1/2 c
red bell pepper, chopped
1/2 c
tomato, chopped
1/2 tsp
olive oil
1 Tbsp
lime juice, freshly squeezed

Step-By-Step

1Mix all ingredients except oil & lime juice. Drizzle oil & lime juice over the salad & mix again.
