I took an African cooking class this week and this is the salad we made to go with our dinner. It is easy, a little different and TASTY!

Blue Ribbon Recipe

Notes from the Test Kitchen:
All the bright colors mixed together makes this salad an inviting treat! Tangy and fresh, this would be a great light dish for your next picnic or BBQ.

Ingredients

1/2 small
onion
2 small
tomatoes
1 small
jalapeno
DRESSING
2 Tbsp
lemon juice
2 Tbsp
rice wine vineagar
1 Tbsp
olive oil
1 tsp
salt
1/8 tsp
fresh ground pepper
1 tsp
splenda or white sugar

Directions Step-By-Step

Coarsely chop or dice onions and tomatoes. Seed the jalapeno and dice finely. You can put the seed in too if you want it a little spicier.

Mix dressing ingredients together until well combined. Pour dressing over vegetables and stir together gently. Let stand for 10 minutes for the flavors to blend and use a slotted spoon to serve.

Thank you so much for the recipe! I had to comb the web to find this perfect, simple replica of a tomato salad that the proprietor of a local Ethiopian restaurant makes. He makes it extra hot for me (and adds a hot chile dust). I do have his magical chile dust, but alas, he's tight-lipped on this salad recipe! This one nailed it! I'd found others that really complicated it. This perfectly balanced dish needs no other ingredients than the ones listed in this recipe. It's great as soon as you make it, but it would make a great relish the next day or so. It didn't make it past day two in our fridge, and we even had a fight over who's lunch it belonged to. So, make extras and I'd love to see what other people are pairing it with. Thanks again! I'll be making this year-round.
