English Cucumber Salad

Rose Mary Mogan

I love the English Cucumbers for their thin skin, and the small seeds that they have in them when compared to the regular ones. Either type will work well in this recipe.

I decided to make this healthy salad for our dinner, and it is so simple and easy to make using the Extra Virgin Olive Oil with the Apple Cider Vinegar, and no calorie sweetener packets. I even threw in some Chia Seeds to add a bit of fiber to the salad. We love it, and so did my neighbor. I hope you like it too.
