Egg Salad A Different Way

Made this one up on the spur of the moment, Easter Sunday, trying to decide what to do with all the colored eggs! It's a bit reminiscent of a Chef Salad, especially if you throw in some bacon bits.

Ingredients

4
eggs, boiled, peeled, and mashed with a fork
1/3 to 1/2 c
ranch dressing, any variety
1/2 c
finely grated sharp cheddar cheese
1/4 c
chopped green pepper and/or celery (optional)
2-3 Tbsp
bacon bits (optional)
salt and pepper to taste

Step-By-Step

1Combine the eggs, dressing, cheese, green pepper/celery, and bacon bits if desired. Taste and add salt and pepper if needed.
2Serve on sandwiches or toast, or in tomato cups, or piled inside green pepper rings on lettuce leaves.
