Easy Sugar Free Coleslaw

I love coleslaw and this one is so colourful. You can double the recipe if you wish.

Ingredients

FOR THE SALAD

1/2 large
head savoy cabbage
1 large
carrot, shredded

FOR THE DRESSING:

1/4-1/2 c
xylitol
1/4 tsp
sea salt
2 tsp
dry mustard
1 Tbsp
celery seed
1 c
unfiltered apple cider vinegar
2/3 c
grapeseed oil

Step-By-Step

1Shred the carrots and cabbage and put into a medium size bowl.
2Combine the other ingredients in a small sauce pan and warm until the Xylitol is dissolved.
3Cool the dressing
4Pour "some" of the dressing on the cabbage/carrot mixture and stir making sure it's all coated
5If you have left over dressing you can freeze it.
6Enjoy!
