2 medium
cucumbers, washed, scored and thinly sliced
6 - 8
radishes, ends trimmed, thinly sliced (optional)
1 medium
sweet or red onion, peeled and thinly sliced into rings
1 1/2 c
white vinegar
1 c
1/4 c
sugar, or to taste
salt and pepper to taste


Step 1 Direction Photo

1Wash the cucumbers and score with a fork or remove part of the skin.

2Place the cucumbers, onions and radishes, if using, in a medium bowl.

3In a separate bowl, mix the vinegar, water and sugar. Stir until sugar is dissolved.

Step 4 Direction Photo

4Pour vinegar mixture over the cucumbers. Cover and chill for at least 2 hours before serving.
