Cucumber and Radish Salad

You can do the first part of this recipe up to a week in advance, but the radishes must chill for at least 5 hours, so plan ahead.

Ingredients

1 1/2 c
unseasoned rice vinegar
1/2 c
distilled white vinegar
1 tsp
coriander seeds
1 tsp
fennel seeds
1/4 tsp
ground turmeric

whole allspice
1
bay leaf
1 bunch
radishes, stemmed and quartered
6 c
cucumber, peeled and cut into 1/2 inch pieces
1 small
vidalia onion, thinly sliced
2 Tbsp
olive oil
salt
pepper

Directions Step-By-Step

Combine the first 7 ingredients in a saucepan. Bring it to a simmer.

Place radishes in a heatproof container; pour the vinegar mixture over it. Chill for at least 5 hours and up to 1 week.

Before serving, add the cucumber. Let sit for 25-30 minutes. Transfer to a large bowl, and stir in the Vidalia onion and olive oil. Season with salt and pepper. Enjoy.
