Ingredients For cucumber and radish salad

1 1/2 cunseasoned rice vinegar

1/2 cdistilled white vinegar

1 tspcoriander seeds

1 tspfennel seeds

1/4 tspground turmeric

2whole allspice

1bay leaf

1 bunchradishes, stemmed and quartered

6 ccucumber, peeled and cut into 1/2 inch pieces

1 smvidalia onion, thinly sliced

2 Tbspolive oil

salt

pepper
How To Make cucumber and radish salad

1Combine the first 7 ingredients in a saucepan. Bring it to a simmer.

2Place radishes in a heatproof container; pour the vinegar mixture over it. Chill for at least 5 hours and up to 1 week.

3Before serving, add the cucumber. Let sit for 25-30 minutes. Transfer to a large bowl, and stir in the Vidalia onion and olive oil. Season with salt and pepper. Enjoy.
