Crunchy Ramen Cabbage Salad

- hean napa or bok choy cabbage, shredded
- green onions, sliced thinly
- red onion, thinly sliced
- 1 pkg
- (3-oz) ramen noodles with seasoning pack
- 1 pkg
- (6-oz) slivered almonds
- 1 Tbsp
- sesame seeds
- 1/2 c
- extra virgin olive oil
- 1/4 c
- 3 Tbsp
- rice vinegar
- 1/4 tsp
- golden rasins for garnish, if desired
1Preheat the broiler.
2Shred the cabbage and slice the onions, and mix together in a large salad bowl.
3Break up the noodles into a broiler pan. Add the almonds and sesame seeds, then put under broiler for 2 minutes. Be careful not to scorch the sesame seeds.
4In a jar with a tight lid, combine the olive oil, sugar, rice vinegar, and salt with the contents of the seasoning pack. Cover the jar and shake well to blend the dressing.
5Pour the dressing over the salad. Add the toasted sesame seeds, almonds, and noodles. Toss to combine.
6Garnish with golden raisins, if desired. Enjoy!
