Country Garden Salad
This is simple and easy to make. It will add some great flavor to your meal in a healthy way!
- 3 Tbsp
- lemon juice
- 2 Tbsp
- extra virgin olive or canola oil
- 3/4 tsp
- 1/4 tsp
- black pepper
- 1 large
- seedless or seeded cucumber
- 1 pt
- grape or other very small tomatoes, cut into halves
- 3/4 c
- thinly sliced scallions
- 1/2 c
- chopped fresh parsely (or less if using dried parsley)
- 1 Tbsp
- chopped fresh mint (optional)
1Whisk together the wet ingredients, until well blended.
2Add remaining ingredients. Toss well. This can be chilled for a few hours before serving, or served immediately.
