Don't let the fritos in this throw you off...... they really work in this recipe. People look at me like I'm crazy when they find out they are in the salad. I am always asked for the recipe whenever I take it to a pot luck or cookout. It's super easy and really delicious! Just DONT add the corn-chips until right before serving. Otherwise they get mushy.

- whole kernel corn
- 1 c
- 2 c
- shredded cheddar cheese
- 1/2 c
- red onion finely chopped
- 1 c
- green bell pepper finely chopped
- 1 pkg
- chili cheese fritos crushed (large bag)
1Mix everything together EXCEPT the chili cheese fritos. If possible let it sit in fridge overnight for the best possible flavor. If that is not possible then let it sit for at least 2-3 hours for flavors to marry.
2Crush the chili cheese fritos in the bag before opening it. Add the chili cheese fritos to the corn mixture RIGHT BEFORE serving so that they do not become mushy. Stir it all together and ENJOY! (P.S. if you cannot find the chili cheese fritos you can substitute the bbq flavored ones.... I have before)
