Corn and Tomato Salad
cherry tomatoes quartered
2 1/2 c
fresh corn kernals (raw or grilled) approx: 5 med ears.
red onions peeled diced
head of butter lettuce
freshly chopped basil
sea salt and pepper to taste
Opt. 1/3 c
bell pepper (petite diced)
1In a bowl combine tomatoes, corn and onion. Sprinkle with sea salt and pepper.
2Stir in ranch dressing and toss.
3Arrange lettuce leaves into a cup shape.
4Spoon mixture into each lettuce cup and sprinkle with chopped basil. Enjoy!!!

Don't see any red onions or ranch dressing in your picture. Do you think yellow or white onions would work just as well?
