Ingredients

2 c cherry tomatoes quartered
2 1/2 c fresh corn kernals (raw or grilled) approx: 5 med ears.
1 small red onions peeled diced
1/3 c ranch dressing
1 medium head of butter lettuce
4 Tbsp freshly chopped basil
sea salt and pepper to taste
Opt. 1/3 c bell pepper (petite diced)

Teresa's Notes:

Great change to the typical lettuce and tomato salad.

 

Directions

1
In a bowl combine tomatoes, corn and onion. Sprinkle with sea salt and pepper.

Stir in ranch dressing and toss.

Arrange lettuce leaves into a cup shape.

Spoon mixture into each lettuce cup and sprinkle with chopped basil. Enjoy!!!

Don't see any red onions or ranch dressing in your picture. Do you think yellow or white onions would work just as well?

Barbara, I am sorry I was showing that it was fresh cut off the cob. I do not know how to post pics of as you go.
I don't think the white onions would work they are more tangy than sweet. I haven't tried it with the yellow but seeing it is close in taste to red onions it should work just fine. It can also have diced bell peppers in it as well.

Yes, it is safe to eat raw corn. LOL, I had to giggle my kids eat raw corn all the time and english peas are delicious straight out of the garden.

I grew up on a farm with a garden we raided it often as kids for snacks. I wouldn't stear ya wrong. LOL, we often ate it sitting right there in the field. Just rinse it off well and all will be good.
