Ingredients

cooked corn freash or frozen
1 medium
zucchini, diced ( about 2 cups )
2 medium
tomatoes cored and chopped ( about 2 cups )
2 Tbsp
chopped mint
2 Tbsp
olive oil, extra virgin
2 Tbsp
lemon juice, fresh
1 tsp
honey
1/2 tsp
kosher salt
coarsley ground pepper to taste

Step-By-Step

1Combine corn, zucchini, and mint.

2Combine oil, lemon juice, honey, salt, and pepper; wisk. pour over salad and mix gently. Serve with Arugula or Spinach.
