Even if you don't care for cauliflower, I believe you'll love this creamy, sweet/tart ice cold salad.

1Trim off cauliflower leaves, stem and any discoloration.
Cook cauliflower in about 2 inches of boiling water water in a covered saucepan until just tender. Drain on paper towels and let cool.
(tip) adding a tablespoon of white vinegar to water keeps cauliflower odors away.
3/4 cup mayonaise,
4 tablespoons milk
1 teaspoon salt or salt substitute
2 tablespoons sugar or sugar substitute
2 tablespoons white vinegar
Mix well, refrigerate for 5 minutes.
Into a medium bowl break cooled cauliflower into 1-2 inch pieces.
Add mayonaise sauce and lightly mix. Sprinkle top wih a little black pepper.
(tip) Often, I add several green peas or a bit of grated carrot.
Chill for several hours and serve.
