The inspiration for this refreshing cucumber salad came from Wendy Peterson. This is a great side for any meal. Get creative and add shredded cooked chicken or shrimp to the salad and you have a meal. Thank you Wendy! sw:)

Ingredients

1 large
english cucumbers, chopped
3 Tbsp
rice vinegar
1 Tbsp
splenda
1 tsp
kosher salt
1 medium
lime zest
1 tsp
fresh ginger, grated
1 large
garlic clove, grated
1/2 small
hot chili pepper. chopped
1 Tbsp
fresh basil leaves,torn
1 Tbsp
fresh mint, chopped

Step-By-Step

1Mix all ingredients together. Chill for at least 15 minutes.
