Bacon, Egg & Tomato Salad Sandwiches

- eggs, hard boiled
- 5 slice
- bacon, cooked and crumbled
- tomato, seeded, chopped
- green onion with top, chopped
- 1/4 c
- 1 Tbsp
- creole mustard
- "just a pinch" of salt
- "just a pinch" of pepper
- splash of hot pepper sauce
- 8 slice
- whole wheat bread
1Hard boil eggs.
2Cook, drain and crumble bacon.
3Place eggs in mixing bowl, break up with a fork.
4Add remaining ingredients and mix well.
5Season to taste with salt, pepper and hot sauce.
6Refrigerate to allow flavors to blend.
