Avocado and tomato salad with shrimp

2 large
ripe avocados,hass brand if you can get them!
3 medium
ripe tomatoes
1 small
seedless cucumber
1 medium
1 bunch
fresh cilantro
1/2 c
olive oil, extra virgin
1/2 tsp
salt and pepper
1 pinch
oregano, dried
1 lb
cooked plain shrimp
4 medium
serving bowls
1 bunch
butter lettuce leaves


Step 1 Direction Photo

1Peel and dice avocado into bite sIze pieces along with the tomato and the cucumber into a large mixing bowl. Add the cooked shrimp,mix well.

2Grate 1/2 of the lime zest then squeeze the juice into the salad.Finley chop about 1 cup of the cilantro leaves,add the oregano,olive oil,cilantro,salt&pepper to the salad. Mix well and refrigerate.

3line the bowls with the butter lettuce leaves,fill with salad and serve. This can be served with warm tortillas or bread whichever you prefer! Enjoy!
