Ingredients For almond tabbouli salad

1/2 cuncooked cracked wheat

1 cboiling water

1 cchopped tomatoes
-
3/4 cchopped fresh parsley
-
1/2 csliced green onion
-
1/2 csliced or chopped toasted almond
-
1/4 calmond oil (or extra virgin olive oil)

1/4 cfresh lemon juice
-
1/8 cchopped of fresh mint (or 2 tsp. dried mint, crumbled)

salt and pepper to taste
How To Make almond tabbouli salad

1Soak the cracked wheat in boiling water 1 hour, drain. Mix in tomatoes, parsley, green onions and almonds.

2Combine almond or olive oil with lemon juice, mint, salt and pepper. Toss dressing with cracked wheat mixture.

3Chill several hours for flavors to blend. Enjoy!
